A night away

My sister asked for a post about our highly anticipated overnighter without kids this past weekend, and it has taken three nights to get past the exhaustion to write this!  We had a great time but stayed out waaaaaay past our bedtime and paid for it!

A month or so ago my mom asked if she could have the kiddos each stay the night at her house for a little one on one time.  I joked and said yes, but I really needed them all to go there or her to come our way so that Jordan and I could go to the Needtobreathe concert.  To my delight she said "Yes!"  While we have had date nights without the kids for a couple hours this would be the first time in 3 1/2 Years that we would not have kids for the overnight!  CRAZY!

Saturday morning I had to leave before 8:00 am to be in Ames to set up for the women's seminar so Jordan took the kids to my parents.  (They didn't cry when he left, or for bedtimes.  Elise didn't even reach for me when my folks brought them back. 29 1/2 hours without me, and she didn't care!)  My sister picked me up after the seminar for a much needed hair appointment.  (What am I going to do when she leaves me...sniff, sniff.)  Jordan picked me up from her house, and we went to an Ames favorite, The Cafe.  After that we went out for frozen yogurt. (Jordan owes me for that one because I really wanted a Jamocha shake from Burgies, but he wasn't in the mood. I loves me some Burgies Jamocha shakes and will cash in on this some Sunday morning soon!)  The concert didn't start until 9:00, yes that is p.m.  I am normally in my jams by 9:00, but I drank so coffee and stayed awake!  We had some time kill and walked around campus a bit.  It is wonderful how conversation just keeps going and going as you walk.  It was great.

Ben Rector opened the concert.  This was a great surprise.  We hadn't really listened to him before, and he was really good.  He loves on both the piano and guitar so that was an easy win for Jordan.  We downloaded two of his albums when we got home.  Needtobreathe did not disappoint. 

It was pretty funny realization that the last concert we went to was a Dino piano concert.  At that concert we were one of the few in that audience that hadn't soaked our teeth in a dish the night before. A piano concert at a church at 2:00 in the afternoon is going to attract an older crowd.  This was in contrast to the Ben Rector/Needtobreathe audience that was much, much younger.  It was evident that they loved their smart phones and fermented drinks!  We felt very old wondering "Why these young people couldn't get off Facebook and enjoy the moment?"

Chicken Stir-Fry Stew (From the book Nourishing Traditions)

1 lb chicken breasts cut into small pieces juice of 2 lemons about 1/2 C extra virgin olive oil or lard 1 cup peanuts 1 bunch green onion, sliced 2 large carrots, julienne 1 red bell pepper, julienne 1 C broccoli flowerets 2 cloves garlic, finely chopped 1 tsp grated ginger 1 Tbs Rapadura or sugar 1/4 tsp red pepper flakes 2 Tbs soy sauce 1/8 C vinegar 2-3 C chicken stock 2 Tbs flour mixed with 2 Tbs water Marinate chicken pieces several hours in lemon juice. Remove and pat dry. Mix chicken stock with vinegar, soy sauce, pepper flakes, ginger, sugar and garlic and set aside. In a heavy skillet or wok, saute chicken over olive oil until cooked through. Using a slotted spoon transfer chicken to a bowl and reserve. Saute peanuts a minute or two (add more oil if necessary.) Add peanuts to chicken. Saute onions, carrots and pepper for two minutes (add more oil if necessary). Add sauce mixture to veggies and bring to a boil. Return chicken and peanuts to the pan and mix well....

Oh happy Day!

I am cautiously announcing a dairy victory!  (Cautiously, because I have declared victory before only to have to have to recant my declaration!)  I have been cooking with low reacting dairy products and have not noticed any effects on Reuben or Elise!  :)  I have been letting them have one meal with baked in dairy each day.  (We have skipped a day or two because so many of the recipes in my rotation are d-free now that I had to make an effort to put it in!)  I have been able to use butter, buttermilk and in a few recipes I used half dairy milk half non dairy.  Why is this so exciting?  First, we went to a picnic the other day and I didn't read labels.  I didn't have to be "that mom."  Second, I will be able to save some money!  D-free chocolate chips can be expensive, and real food butter substitutes are expensive.  Third, I don't have to experiment with nasty d-free cookie recipes any more!  If it never gets better ...

Signs of the times

Jonah was sitting at the table yesterday and said "Mom, I was thinkin' 'bout somethin'.  I want a girlfriend." "What?" "I want a girlfriend? "How about I just be your girlfriend?" "No, I want a little one." "Where did you hear about girlfriends" "Gramma let me borrow her DVD when I had my tonsils out and that boy had a little girlfriend.  I want one." I cannot think of what he watched or what might have reminded him about this concept. Audrey was running ahead on our walk yesterday "Look mom!  I can run fast and I don't even have things in my ears!"  I assume this means earbuds that would connect to her ipod!
