Crock Pot Month

I am sorry Mom, I know that you hate this kind of post, but it is what it is today. 

When I did my meal planning for the month of January I was tired of our same old meals so I decided to try a bunch of new recipes from http://crockpot365.blogspot.com/ and I decided to post the winners. It was probably not the most cost effective way to cook.  (It has been so nice that I haven't been in the mood for cheap soups! Fareway has those cheap little bottles of wine that are perfect for some of these recipes.) There are quite a few diary free recipes on her site so I was a happy camper, and she gives the verdict in her family's opinion so that was helpful in choosing what I wanted to make.

Clove Garlic Chicken-This was Jordan's favorite, but not mine.  I will try it again with chicken breast.  I used thighs and they are not my first choice in meat.
Beef and Broccoli-I thought that this was great.  It is a small meal.  It worked to feed all of us because the kids do not do seconds on broccoli!
Brown Sugar Chicken-This is a crazy amount of sugar, but I wanted a meal that everyone would eat.  I hoped that most of the sugar stayed in the drippings left in the bottom of the pot.  Reuben and Elise loved it !
Red Wine and Cranberry Glazed Beef-This was AMAZING. Not a leftover in sight.  As with all roasts this one needs to be completely thawed before cooking and takes a full 7.5-8 hours to cook, but I have made it twice because I loved it so much!
Coq Au Vin-I used white wine instead of red because the idea of purple chicken didn't amuse me much.  I will be making this one again soon as well!

Brussels Spouts-I had never had Brussels spouts before, but I am trying new foods in 2012!  These were easy and good.  I don't know that I will make them again, but I am glad that I tried them!  We had guests for supper that night, and they had seconds!

Chicken Stir-Fry Stew (From the book Nourishing Traditions)

1 lb chicken breasts cut into small pieces juice of 2 lemons about 1/2 C extra virgin olive oil or lard 1 cup peanuts 1 bunch green onion, sliced 2 large carrots, julienne 1 red bell pepper, julienne 1 C broccoli flowerets 2 cloves garlic, finely chopped 1 tsp grated ginger 1 Tbs Rapadura or sugar 1/4 tsp red pepper flakes 2 Tbs soy sauce 1/8 C vinegar 2-3 C chicken stock 2 Tbs flour mixed with 2 Tbs water Marinate chicken pieces several hours in lemon juice. Remove and pat dry. Mix chicken stock with vinegar, soy sauce, pepper flakes, ginger, sugar and garlic and set aside. In a heavy skillet or wok, saute chicken over olive oil until cooked through. Using a slotted spoon transfer chicken to a bowl and reserve. Saute peanuts a minute or two (add more oil if necessary.) Add peanuts to chicken. Saute onions, carrots and pepper for two minutes (add more oil if necessary). Add sauce mixture to veggies and bring to a boil. Return chicken and peanuts to the pan and mix well....

A Very Late Posting of 1st Day of Enrichment Class!

 Yep, enrichment classes started over a month ago and I am just now posting the "First Day of Class" photos.  This year we cut back to just one day.  It is lovely.  Jonah and Audrey are both taking art and science.  Jonah is also taking drama.  I am really curious to see how he does with that because he has been really excited about it.  The back packs are completely unnecessary, but a must for the back to class picture!     Getting Ready to head out!   Miss Poser as she gets ready to go inside!    Way too cool for this   Me too Mom!  

A little extra help

I had heard that age 8 was when a mom feels like a child can really help out around the house.  I must have an exceptional child because Jonah has become very helpful at 7 1/2!  :)    I kept asking him to load the washing machine, and then one day I heard it running!  He took it upon himself to start the machine as well.  A couple of quick lessons and he was good to go.  We are working on load size.  At first two shirts constituted a load.  Then after explaining water waste he tried washing every piece of cloth in the house at once.  It was amazing to me how helpful the extra pair of hands has been the last couple weeks.  I am loving that this is still an exciting new chore that he is eager to help with!     I taught him how to make scrambled eggs, and Jonah now thinks he is the scrambled egg master.
