Baked Potato Soup

Jordan loved this so before I lost the recipe I thought that I should get it down!  Baked Potato Soup INGREDIENTS: 6 large baking potatoes, cut in 1/2-inch cubes 1 large onion, chopped (optional) 2 cups broth 2 cloves garlic, minced (or pressed) 3 Tbs butter 2 1/2 teaspoons salt 1 teaspoon pepper 2 cups milk 1 cup shredded sharp Cheddar cheese 3 tablespoons chopped fresh chives 4 oz cream cheese 8 slices bacon, fried & crumbled   cheese, for sprinkling PREPARATION: Combine  first 9 ingredients  in a large crock pot; cover and cook on HIGH for 4 hours or LOW for 8 hours (potato should be tender).  Mash mixture until potatoes are coarsely chopped and soup is thickened. Stir in cream cheese and chives.  Top with bacon and more cheese.

Oh Audrey!

Camping story is to come after I get the pictures loaded onto the computer, but first a few little things that I wanted to get written down so that when Audrey has a daughter and is embarrassed of the things that she says I will have something to show her. My sister came to visit.  She was no more than out of the van when  Audrey looked her up and down and asked "Why aren't you wearing pretty shoes today?" Later that day we met the son of a neighbor.  He had a little more of a "New York" to him than the farmer or engineer crowd that we tend to hang with.  Audrey noticed this and said to him " I have never seen a guy that looks like you before."  Thankfully he rolled with that one nicely, made  a funny face and said "You mean like this?" Last week I wore a brown shirt to church.   As we were getting out of the van Audrey said "I like your shirt mom."  I should have said "Thank You!"  But her complement took me off gua...

Raspberry Cream Muffins

1 cup fresh raspberries 3/4 cup plus 2 Tbs sugar 1/4 cup butter softened 1 egg 1/2 tsp almond extract 1/2 tsp vanilla extract 2 1/4 cups flour 3 tsp baking powder 1/2 tsp salt 1 cup half-and-half cream 1 cups finely chopped vanilla or white chips 2 Tbs brown sugar In a small bowl, toss the raspberries with 1/4 cup sugar; set aside.  In a large mixing bowl, cream the butter and 1/2 cup sugar.  Beat in egg and extracts.  Combine the flour, baking powder and salt; add to creamed mixture alternately with cream.  Stir in chips and reserved raspberries. Fill greased or paper-lined muffin cups 3/4 full.  Combine brown sugar and remaining sugar; sprinkle over batter.  Bake at 375 for 25-30 minutes or until a toothpick comes our clean.  Coll for 5 minutes before removing from the pan to wire rack.  Serve warm.

Creamed Chicken 'n' Biscuits

Biscuits: 2 cups flour 1 Tbs baking powder 1 tsp salt 2/3 milk 1/3 vegetable oil Creamed Chicken: 1/4 cup chopped onion 1/4 cup butter 1/4 cup flour 1/4-1/2 tsp salt 1/8 tsp pepper 2 cups milk or chicken broth 2 cups cooked chicken, chopped Minced fresh parsley In a large bowl, combine the flour, baking power and salt; add milk and oil.   Stir until the dough forms a ball.  On a lightly floured surface, knead 8-10 times or until smooth. Roll or pat dough into a 6 inch square about 1 inch thick.  Cut into 2 rectangles.  Place on a lightly greased baking sheet.  Bake at 450 for 10-12 minutes or until biscuits are golden brown. Meanwhile, in a large skillet, saute the onion in butter until tender.  Stir in flour, salt and pepper until blended.  Gradually add milk; bring to a boil.  Reduce heat; cook and stir mixture for 1-2 minute or until thickened.   Stir in the chicken and parsley; cook until heated through. ...

Double Chocolate Mint Dessert

BROWNIE LAYER 1 C flour 1 C sugar 1/2 C butter (soft) 4 Eggs 1 1/2 C (16 oz can) Hershey's syrup MINT CREAM LAYER 2 C confectioners sugar 1/2 C butter (soft) 1 Tbs water 1/2 tsp mint extract 3 drops green food coloring (opt. and you can change the color for the event!) CHOCOLATE TOPPING 6 Tbs butter 1 C semi-sweet chocolate chips Heat over to 350 and grease a 9x13 inch pan.  In a large mixing bowl beat flour, sugar, butter, egg and syrup until smooth.  Pour into prepared pan.  Bake 25 to 30 minutes.  Cool completely.  In a small bowl, combine ingredients for mint cream layer and beat until smooth.  Spread on cooled brownie and chill.  Melt butter and chocolate chips and mix until smooth.  Pour over mint layer; cover and chill.
